I'm a true oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of these yet? (? They're a few of the most popular recipes on my site because they taste very sweet and cozy, exactly like traditional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
That means you're going to start with whole wheat bread (or fermented, if you prefer) and instantaneous oats (like those... or these for a gluten-free edition!) . Instant oats are thinner and smaller than conventional rolled oats, also you can locate them at canisters right next to those traditional oats in the grocery store.
I probably seem like a broken record by now... But because I ? you and need your cookies to turn out totally plump and soft, I'm reminding you again... Measure your yogurt and bread correctly, using this method or even a kitchen scale! (? That is the one I own and love. A lot of either ingredient is likely to make your biscuits taste cakey or dry, instead of chewy. This is especially true of the oats--that they behave like little sponges and consume lots of moisture from your cookie dough!

Watch those bananas? And all those brown stains? If it comes to baking with bananas, brown = amazing! I ? additional speckly bananas because they have so much bright, bold taste --and additional natural sweetness! That is the minimum quantity of brown which I recommend. More is better!
The remaining portion of the cookie dough's sweetness comes from another natural ingredient... Pure maple syrup (like that!) . You want the sort that comes directly from maple trees, which is usually sold in thin glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar!

The raisins add much more natural sweetness! The recently purchased, extra plump, perfectly delicate ones are perfect... But if you have elderly, slightly dried out carbohydrates (hmm... it seems absurd to describe dried fruit as dried outside! ) , that is okay!
Simply add them into a microwave-safe bowl, and put water on top till they're fully covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. If you let the raisins sit while mixing together the cookie dough, then this small trick hydrates them so they're incredibly succulent --and that makes a big difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The familiar comfy spices and plump raisins make these much more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --should they last long!
1 cup (100g) instant oats (fermented if required and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (measured like this)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1 teaspoon vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or webpage coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough to 15 rounded scoops on the sheet, and flatten to the desired depth and width by means Banana Oatmeal Cookies - Pinch and Swirl of a spatula. Bake in 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the oats and flour properly using this method or even a kitchen scale. (? That's the one I own and enjoy!) Too much of either could dry from the biscuits and abandon them cakey instead of chewy.
Immediate oats are also known as quick-cooking or minute oats. They are available in large canisters, just like conservative oats. They're not the ones in the tiny flavored loaf of bread. To make your own, add the same quantity of conservative oats to a food processor, and pulse 10-12 times or until the oats will be approximately 1/4 into ? of their original size.
For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, and 1/2 teaspoon xanthan gum. Most store-bought fermented flour blends (such as that one!) Will also do the job, if quantified like this.
If your raisins are old, drier, and not so plump or juicy... Add them to a microwave-safe bowland put water on top till they're totally covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. Should you allow the peppers sit mixing together the cookie dough, then this small hint hydrates them so they're really soft and juicy!
